Hearts of Palm Pasta with Pan-Seared Salmon

We all need to get our Vitamin D3, especially during the winter when our bodies see less sun. And whether it’s from the sun, the nutrition we eat or supplements we intake, Vitamin D3 is essential for a healthy existence.

We love our Vitamin D3 softgels, but we love our food just as much and created this delicious and nutritious recipe with the trendy, low-carb Heart of Palm Pasta. Topped with pan seared Salmon, which is a great source of Vitamin D3, this recipe is packed with nutrients. It’s easy and can be made in less than 20 minutes.

Ingredients

Serves 2- 3 

3-4 ounces (per serving) Salmon, pan seared

Hearts of Palm Pasta (boxed from Trader Joe’s)

Sauce:

1 Garlic clove

1 tbsp SR MCT Oil or Olive Oil

½ Avocado

½ Lemon, juiced

¼ cup Coconut Cream

Pinch of Salt

Extras: microgreens, crushed red pepper

Directions:

  1. Combine all sauce ingredients in a food processor or blender. Blend until smooth and set aside.
  2. Heat sauce pan to medium low and add hearts of palm pasta. Heat thoroughly, about 3-4 minutes.
  3. Add about ¼ cup of sauce. Stir to combine and heat thoroughly.
  4. Remove from heat, plate and top with pan seared salmon.
  5. Serve & enjoy !
