Chinese Chicken Salad with Matcha Sesame Dressing

Do y’all ever just crave a Chinese Chicken Salad? What about a Matcha Green Tea? Well, we do! And we’ve got ya covered for both in one delicious and satisfying meal — Chinese Chicken Salad with a Matcha Sesame Dressing. It’s full of crunch, juicy chicken, creamy avocado and a tangy Sesame Matcha dressing that adds an earthy flavor and an antioxidant boost to boot! Promise. You’re gonna eat it up!

For the Dressing:

Serves about 4

5-6 cups Napa Cabbage, thinly sliced

2 Organic Chicken Breast, grilled and sliced

2  cups Cooked Quinoa

1 large Avocado, sliced

¼ cup Celery, sliced

¼ cup Cucumber, chopped

¼ cup Green Onion, sliced

¼ cup Mini Peppers, sliced

¼ cup Cilantro, chopped

¼ cup Slivered Almonds

2 tbps Sesame Seeds

Matcha Collagen for dusting

Instructions:

For the dressing:

¼ cup SR MCT Oil

¼ cup Sesame Oil

½ cup Rice Wine Vinegar

1 tbsp SR Matcha Collagen

1 Garlic clove, minced

1 tsp Ginger, minced

1 tsp Honey

S+P to taste

Instructions:

For the dressing:

Combine all ingredients, whisk and refrigerate. When adding the SR Matcha Collagen we recommend sifting into the other ingredients to prevent clumping.

For the Salad:

Prepare all ingredients. Place napa cabbage, quinoa, cucumber, mini peppers, edamame, celery, green onions, almonds in a large bowl. Pour over the Matcha Collagen Sesame Dressing and toss to combine. Top with chicken, avocado, sesame seeds and a dust of SR Matcha Collagen for even more of an antioxidant boost.
